Swiss chard & spinach sauté
Description
A great side dish with any type of meat or poultry meals, and easy way to feed your family good greens.

- Bring a large pot of water to a boil, remove the stems from the Swiss chard, Keeping the stems separate, cut them into 1/2″ pieces, blanch the leaves in the boiling water until tender, repeat the same with spinach, about 3–4 minutes, remove and cool.
- Cook the stems in the boiling water until tender, about 4–5 minutes. Drain the water from the stems and set aside.
- On medium heat add olive oil into a 2-qt sauce pot, add the onions and sauté for 3 minutes, add the garlic and sauté for additional 1 minute, Stir in the lemon zest, salt, pepper, and nutmeg.
- Meanwhile, chop and squeeze the water out of the Swiss chard and Spinach leaves. Add the leaves and stems to the onions, over medium-low heat, stirring occasionally, until warmed through.
