  1. Preheat the oven to 400F degrees.
  2. In a large bowl, whisk together all ingredients.
  3. Add mushrooms, eggplants and cauliflower, toss to coat.
  4. Arrange vegetables in a single layer on a baking sheet, so that each one is touching the pan.
  5. Roast them in the oven for about 25 to 30 minutes, until soft and puckered.
  6. To serve, drizzle with balsamic reduction and sprinkle with fresh parsley for garnish.(optional)
