Za’atar & Olive Roll

Ingredients:

  • 1 onion (chopped fine)
  • 1 egg (I use egg substitute during lent)
  • ½ cup orange juice
  • ¼ cup Vegetable oil
  • ¼ cup olive oil
  • ½ tsp paprika or red pepper
  • Sesame for garnish
  • 2 tsp baking powder
  • 1 cup green olives (black olives will work as well)
  • 2 tbsp Za’atar

Instructions:

Preheat oven to 350F, Soak olives in water for half an hour, seed and cut each olive in slices (or buy sliced olives). Mix flour, baking powder and salt in a bowl, add orange juice, olive oil and vegetable oil, knead well to form dough, divide dough into 2 pieces and leave for 10 minutes. Roll out the dough until thickness is 1cm, Spread on each pastry half the quantity of onion, olives, za’atar, paprika, salt and pepper. Roll dough over stuffing like Swiss roll, brush oil on non-stick baking dish, put two pastry rolls in a baking dish, brush pastry surface with a beaten egg or egg substitute, sprinkle sesame seeds, bake until pastry surface becomes golden (about 25 minutes), let it cool, cut into slices and serve.
